Cheeseburger Tacos

These are absolutely incredible, and super easy to make. Nothing fancy here, just some truly soul-satisfying food.

SHIT THAT YOU NEED

  • Pan (I prefer cast iron)
  • Spatula
  • Butter or Ghee
  • Ground Beef (I used 45-day dry-aged spinals dorsi)
  • Minced or Sliced Onion (I used red, but you can use other shit)
  • Minced or Sliced Pickle
  • Minced or Sliced Tomato
  • Sliced American Cheese
  • Thousand Island Dressing
  • Shredded Iceburg Lettuce (If you like fancy shit, then fine)
  • Taco Shells (I used flaccid corn, but you can use rock-hard)

HOW THE FUCK TO MAKE THEM

  1. Heat up your pan and toss in a little bit of butter or ghee. Once that’s liquefied, throw in your beef and your onions.
  2. Chop and mix them together with the spatula to get a uniform distribution of onions into the ground beef.
  3. Spread the meat and onions across the entire surface of the pan.
  4. WAIT. Allow a crisp to form on the bottom of the meat and onion mixture.
  5. Flip the mixture over to get a crisp on the other side.
  6. Cover the the meat and onions with slices of American cheese.
  7. Cover the pan with a lid, allowing the cheese to become melted.
  8. Scoop some of this “cheeseburger” mix into your taco shells.
  9. Add lettuce, tomato, pickle and thousand island dressing.
  10. EAT, SHIT, REPEAT.

Asian Beef Lettuce Cups

This is a pretty simple and healthy recipe for getting your beef on. The first thing you need to do is procure some spices.

  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground star anise
  • 1 teaspoon ground fennel seed
  • 1 teaspoon ground cloves
  • 1 teaspoon cayenne pepper or ground Szechuan peppercorns

The above spices can be substituted with the same amount (2 & 1/2 teaspoons) of Chinese Five Spice, if you have it.

  • 1 teaspoon granulated garlic
  • 1 teaspoon ground black pepper
  • 1 teaspoon kosher salt

Brown a pound of ground beef in a pan, the same way you would for something like tacos, and strain off any excess liquids and fat. Add in the spices and continue browning until the beef is fully cooked and the spices are evenly distributed across the meat.

Scoop out portions of the beef into Bibb or Iceberg lettuce. Drizzle on some toasted sesame oil, sprinkle on some sesame seeds, and top with fresh cilantro, sliced fresh scallions and crispy fried shallots or onions. Then shove it into your mouth and eat it.

If ground beef isn’t your thing, you can use this as a spice rub for grilling or searing steaks as well. Just make sure you coat the steaks generously with the spices first.

Gebhard’s Beer Culture

Gebhard’s is a beer connoisseur’s dream bar. Their bottle menu is five or six pages long, printed in tiny 8-point font (perhaps even smaller), and organized by style. Their tap selection is pretty stellar as well. When I was there, I tried a flight of four different brews from Brooklyn. A pilsner, a saison, a sour fruit beer and a stout (pictured below from front to back, or right to left).

All were pretty great, but the stars of this joint, for me, were these White Castle style sliders.

They’re made with Schweid & Sons ground beef, topped with cheese, steamed minced onions, and a dijon-based sauce that will knock your socks off. These little things were awesome, so it’s no surprise that renowned and respected burger expert Rev Ciancio (formerly of Burger Conquest) is promoting these things. It’s safe to say that these are my favorite sliders.

I highly recommend getting up there to try them out for yourselves. The tots were perfectly crisp as well, and, if sliders aren’t your thing, then you can go with the full sized burger.
