Primal Cut

Primal Cut overall score: 80

Primal Cut is a newly revamped steak restaurant within the Sapphire gentleman’s club. I was invited in for a free meal to help promote the joint. Take a look below:

Flavor: 7

Chef Thomas Perone does a great job with the 40oz tomahawk rib eye for two.

The 37 days of dry aging gave it a really nice aroma.

And Perone and his team nailed the crust on this thing.

Perone leaves soon for The Lambs Club, but he assures me that his staff runs the kitchen extremely well, so you’ll still be in great hands.

With new chef Daniel Fleming at the helm, I tried the porterhouse, as well as a repeat of the tomahawk.

Slightly over on the edges, but there was a good flavor throughout. 7/10.

This baby didn’t have as much flavor as the porterhouse, but it seemed to be more evenly cooked to a medium plus. as opposed to parts medium rare and parts medium well. 7/10.

Choice of Cuts & Quality Available: 9

Two sizes of filet, two sizes of rib eye (a cowboy cut and a tomahawk for multiple diners), a porterhouse for multiple diners, a strip, an A5 wagyu strip and a wagyu spinalis round out the menu here. Really fantastic showing, and the majority of the beef cuts hail from Strassburger Steaks. Can’t go wrong there.

Portion Size & Plating: 9

The 40oz tomahawk was a great size for sharing with another person. And all the other items were well-hung too. The plating is basic steakhouse style: minimal and elegant.

Price: 9

I was expecting skyrocket prices for a joint that’s located in a pricey strip club. But $55/pp on the steaks for two is really fair, especially if ogling tits and ass while you dine is your thing. All soups and salads are $12, and apps range from $14 to $25. Very fair.

Bar: 7

The bar here is on the small side, but they do mix a nice martini. The bartenders are sporting some revealing lingerie style attire – which I think is actually sexier than the gowns that the dancers walk around in – so that boosts up the “stay for another drink” factor in what would otherwise be a not-so-impressive stretch of bar.

Specials and Other Meats: 8

There were a couple of specials that weren’t on the menu, usually a different kind of house-made pasta that’s rolled out on specific days (like their lasagna, which all the strippers love). Big points here for the wagyu presence on the menu, otherwise there is just chicken and lamb for alternative meats.

Apps, Sides & Desserts: 8

We tried a few apps and sides. The salmon poke bowl was really tasty and tropical, with a nice pop of flavor from the pineapple.

The half pound slab of bacon is great too, with a nice sweet and savory sauce that will change your expectations of bacon.

The 5-cheese truffle lobster mac is decadent and tasty, and had a great crispy crust on top. You should definitely order this.

I was disappointed with the asparagus. These are the thin, limp, fibrous kind and not the thick, long, stiff ones you expect to sprout up at a strip club… I mean steakhouse.

This French toast style ice cream sandwich dessert not only tasted great, but for some strange reason I kept subconsciously seeing caramel drizzled tits every time I looked at it.

Maybe because I was in a strip club?

Focus, man!

On another trip, I had this awesome carpaccio with fried capers. This was one of the best carpaccio I’ve ever had.

Seafood Selection: 7

There’s salmon and sea bass on the menu, aside from the nice array of appetizers.

Service: 10

If you dine here, try to get Alfonso as your waiter. He’s really friendly and helpful, knows what to recommend, and is just really on top of his shit. Everyone is friendly, there are no pushy dancers trying to get on top of you while you eat, and aside from the occasional girl walking around in a skimpy outfit as you hear the DJ calling her name to the main stage, you’d never really know that you were dining in a strip club. Whether that’s good or bad depends on you.

Ambiance: 6

I know, I know: How can you rate a steak joint within a strip joint anything lower than a 10 for ambiance?!?? That aspect is excellent, obviously, especially for the waning existence of hetero-normative, straight, cis-gendered alpha males like the majority of my readers. But the dining room is in need of a little sprucing up. It’s a relatively small spot too, which isn’t necessarily a bad thing, but they certainly have the ability to upgrade this place to the level of the untouchable midtown giants. There are low ceilings, it’s a bit stuffy (I think there was a ventilation and AC situation when we went), and the overall feel is very cavern-like. I think they should go all out in this place, maybe throw a few dance cages or a stage in there too. They don’t need to be topless dancers, but just embrace the strip club vibe! All that said, I went in at 6pm. Maybe things heat up later in the night.

I picked up a Groupon for this place because they were offering a steak dinner for two with wine for a fairly low price. It doesn’t take much to get me motivated to try another steak, so this was a no-brainer purchase for me.

Let’s get down to business. The Groupon got us the following, in addition to two glasses of wine:

Chopped Salad for Two: This was a BLT salad and probably one of the top salads I’ve eaten in a while. Obviously it contained bacon, lettuce and tomato, but it also had a great pop from pickles and the right kind of dressing that made you think you were actually eating a BLT without the bread.

Crostini for Two: Mushroom and cheese, and salmon with goat cheese. Both of these were really good, fresh and crisp with great pops of flavor. Unfortunately I focused my lens on the uglier of the two. The salmon one was very pretty.

24oz Steak with Grilled Veggies and Mashed Potatoes for Two: The rib eye was cut into two portions rather than served family style and pre-sliced, which was a bad move. As you can see from the pics below, one side was all cap with a little eye (top) and the other side was all eye with a little cap (bottom).

In any event, it was served beautifully on a hot skillet. The grilling method meant less seared edges, but at least they hit medium rare nicely; pretty much dead on.

There was some gristle and inedible fat, but not an overwhelming amount. It could have used a bit more seasoning as well. 6/10.

As for the veggie sides; I felt that they skimped on the broccoli. We each had 1 small head, and it was a shame because the broccoli was actually tasty and not a throw-away. The mashed potatoes were a little on the dry side but not intolerable.

To sum it up, this was a decent deal. I probably wouldn’t do it again, but I’m not bummed that I purchased it. I think it runs about $80, but if you’re considering getting it, make sure you have a good coupon code to knock back the cost a bit.

Bedford & Co.

My friend Jean invited me to Bedford & Co. for an Instagram infleuncer dinner, since she and a few others were going to be digging into a nice large format rib eye for two (along with other tasty items) and tasting a variety of wines for the restaurant’s “Wine Wednesday” pairings with their somm, Sarah.

This 28-day dry-aged 40oz bone in rib eye from Master Purveyors is a “for two” steak, which comes with lardo, watercress and roasted garlic for $125. We were five, so we pigged out on other shit too.

The prices of beef have certainly gone way up lately. I remember when I was chomping on 36-40oz steaks for one at half the price just a few years back. But hey, this one was free! Not gonna complain.

We were able to sneak into the kitchen to watch Chef Justin Neubeck and his team flame this baby up for us.

But while we were waiting for that to finish cooking and then properly rest, we sparked up some scallops with pumpkin puree, kafir lime and roasted pumpkin seeds.

This was a really interesting flavor combo, and I really liked it. The round sweetness of the pumpkin contrasted nicely with the acidic pop from the lime.

The entrees rolled out all at once, and the five of us Instagrammers went bonkers taking photos of everything.

The first thing I tried was the Long Island duck breast.

Garnished with a scallion ginger oil, glazed with honey, and accompanied by a cranberry purée, this was easily one of the better duck breast dishes I’ve had in quite a while.

Berkshire pork chop was next.

I’m hard to please when it comes to pork chops. My mom used to cook them in a glass covered electric skillet so that they were somehow juicy on the inside but crisp on the outside, and with onions, potatoes and cherry peppers. Very Italian, as I later discovered. With all that said, this was a pretty good version. It had a sour orange glaze and was served with pink winter squash and marinated radicchio.

The main event was that steak, though.

A cut this thick is difficult to cook properly. Lots of times you’ll end up with some spots that are too rare, while the outside is overcooked. I have to hand it to these guys; they did a pretty solid job with this monster.

As you might have noticed from the raw shot above, there wasn’t much of a fat cap on this baby, but what scraps were there after trimming was used to make the lardo, which was really nice. Also I feel like the 28-day dry aging was done masterfully (by Master Purveyors, no less). They really packed a ton of funk and earthiness for the minimal end of the aging process. 8/10.

Since this was essentially a carnivore party, we had to try the burger at this place. It has been getting a fair amount of attention on social media lately, and for good reason. Look at it, for fuck’s sake.

This beauty is topped with bloomsday cheddar, caramelized onion and thick cut braised pork belly. So juicy. Get it when you come here, even if you have to split it with a group of people, like we did.

And of course the fries are excellent as well, which are cooked with herbs right in the fryer oil.

We did a pair of sides as well. Brussels with bacon and apple cider, and roasted wild mushrooms. These were dynamite! The roast on those sprouts was fantastic. Great texture and crisp. And the mushrooms were the perfect pairing with the earthy steak.

Just when you thought we were full, the desserts came out. Chef Canty makes all the stuff in house. We got to try the carrot cake (my favorite of the three – so rich and delicious), cheesecake in a jar, and apple crostada.

Definitely one of the best carrot cake renditions I’ve had in the city, right up there with Bob’s Steak & Chop House and Ocean Prime.

I definitely recommend this place to anyone who generally likes any of the shit that I got to try. All high quality, deftly executed shit.

UPDATE 5/6/17

I came back for brunch with another group of food influencers. I tried much of the menu, but most importantly the hanger steak. This was a very small portion that came with two eggs, potatoes and some greens. The steak had a great char on the outside and a perfect medium rare temp inside. Great seasoning and flavor. I just wish it was bigger! 8/10

The porchetta was delicious as well. It had a great crisp on the outside with juicy, fatty, savory near inside (bacon wheel was additional, and arranged by my wife).

Also nice was the chicken and waffles entree.

And they’re now offering unlimited prosecco mimosas with uniquely flavored mixer juices for brunch.

And of course, what brunch is complete without pastries?

A.O.C. L’aile ou la Cuisse

I was recently invited to A.O.C. for a press meal. The menu looked pretty stacked, with lots of things I wanted to try, so I jumped at the opportunity to come here.

We sat outside in the back garden, which is beautiful, shaded and perfect for a spring/summer meal outdoors, especially with some colorful cocktails like these.

We started with this amazing charcuterie and cheese board called Le Grand Mix. At $28 I felt that this was great. Usually these kinds of items are way overpriced to me, to the point of feeling like ass rape mixed with getting your balls stomped-on by stiletto heels. Here, however, it seemed very fair, if not actually a good deal. There were five sliced meats, a pair of duck confit crostini, three cheeses, some grapes, sliced apples and strawberries. There was even a small mixed greens salad beneath the apples!

Prosciutto, country ham, smoked duck, mortadella, spicy salami, if I had to guess on the sliced meats. The cheeses were brie, gouda and a harder style like parmigiano reggiano.

For our meal, we shared the cote de boeuf rib eye steak for two.

At $79 it comes with a bowl of mixed veggies and french fries. Great deal! The mixed veggies were all fresh, not frozen, and consisted of green beans, asparagus, broccoli and carrots. These had some basic seasonings like garlic and butter.

The fries were thin shoe-string style, which I like. Some were very crisp, and some were half crisp. It was an interesting mix of textures, but the flavors were spot on and they were well-seasoned.

The steak itself was overcooked, unfortunately. There was a bit too much grey going on for medium rare. The meat, as a result, was a little more dense and tough than I like, but it had good flavor otherwise, especially when dipped into the bernaise sauce that came with it (you can choose peppercorn as well, I think).

I’m giving this a 6/10 instead of a 5 or 4, because ultimately this is a wonderful deal and the only real issue was the cooking temperature. I would definitely come back here and order this again, so don’t get the wrong idea. Compared with other steak-for-two deals that often times don’t come with sides, are smaller, and cost much more money, this is a steal. Just make sure you insist on rare.

For dessert we tried the tarte tartin. I wasn’t expecting pie format for this, since it was described as an apple turnover on the menu. But the apple flavor was very natural and not overly sweet. The crust, however, fell short and was a bit gummy. Ultimately it just lacked character, and tasted more like a thick apple sauce than a pie or tart.

My overall recommendation: Definitely get the charcuterie and cheese boards, and if you want to order steak, go for it but just be mindful of the cook temperature. The hanger looks great, and I’m sure the entrecote shell steak is nice too, traditional steak frites style. The mussels look amazing as well. I wish we had room in our guts to try more stuff, especially those.
